“This is a very simple Ayurvedic recipe to make with the help of your kids.”

Here is a light, yet grounding and sustaining and easy to make nutritious dish for the whole family. Sweet potato is a tuber and known to be a comfort food as very easy to digest and provides natural fiber for good elimination and kids love its sweet taste.

Even so, it is good for controlling blood sugar levels. And the ginger in the recipe has a pungent sweetness and aids digestive fire and is a natural anti-inflammatory.

And kale is a great vegetable with many vitamins  such as Vitamin A, K, B6 and C, as well as calcium, potassium, copper and manganese.

Ingredients:

¾ inch of ginger

½ pound of kale

2 pinches of salt

1 tbsp sunflower oil

2 cups sweet potato

Preparation:

  1. Boil the kale under the leaves turn a vibrant green color and strain.
  2. Add the diced sweet potatoes with just enough water to cover them and salt in a separate pot and boil until tender.
  3. Grate and saute ginger in a tablespoon of sunflower oil for 30 seconds. Then add the first two ingredients and mix gently.
